Every loaf starts the same way — flour, water, salt, time. The rest is craft.

Elena Marquez left a career in architecture to apprentice under a third-generation baker in Lyon. She came home convinced that bread is building — structure, patience, and the right materials.

Golden Crust opened in 2019 with one oven and a sourdough starter named "Friday." The starter is still alive. The oven has company now.

We mill some of our own grain. We source organic flour from mills within 200 miles. We ferment our sourdough for 48 to 72 hours because that's how long it takes to make it right.

We sell out most days. We don't make more. If you want it, come early — that's the deal.

How We Bake

Four days from flour to loaf. No shortcuts, no exceptions.

Ferment

Our sourdough starter has been alive since 2019. We feed it daily, let it develop for 48 to 72 hours, and never rush the clock. Good bread starts with patient yeast.

Shape

Every loaf is shaped by hand — no machines, no molds. The baker's hands know what each dough needs: more folds for the rye, gentler handling for the croissants.

Bake

Stone hearth, steam injection, precise timing. Our oven runs hot and our bakers run early. The crust should crackle when you squeeze it.

Share

Out of the oven and onto the shelf by 7 AM. When it's gone, it's gone. We'd rather sell out than make more than we can craft well.
